200g sugar
250g plain flour
1 tsp salt
2 tsp cinnamon
1 tsp bicarbonate of soda
250ml vegetable or sunflower oil
4 eggs
3 medium carrots (about 200g) grated finely
100g raisings, soaked in boiling water for 15mins and drained

Carrot Cake

A simple carrot cake that uses oil so it keeps wonderfully moist. We like it cooked in a tray, cut into fat squares and topped with cream cheese icing.


Mix the sugar, flour, salt, cinnamon and bicarbonate of soda in a large bowl. Add the oil and mix, now crack in the eggs and mix well. Stir in the carrots and raisins.

Lightly oil and line the base of a deep 20cm square cake tin, scrape in the cake batter and bake at 180C for 40mins until a cake skewer comes out clean.
