Ingredients
Serves 4
4 small sardines (ask the fishmonger to gut and scale them), or 4-8 fillets depending on how hungry you are
6 tbs plain flour
2 tbs paprika - we like smoked best
1 tsp salt
1 lemon, zested, then cut into thin slices
Paprika sardines
Sardines are really cheap, and nutritious too - they are full of omega oils which are great for your brain and skin, see here for more healthy info, and herefor more info on buying fish.Here they're cooked simply with a paprika crust, and flavoured with lemon. You don't have to use whole fish - you can use the paprika flour to flavour fillets too, and don't feel limited by sardines - try makerel or other oily fish too.
Also try using this Cajun Spice Mix instead of the paprika to spice the crust up.
Recipe
Mix the flour, paprika, salt and lemon zest together in a bowl, and then tip onto a flat plate.
Wash the sardines under the tap in cold water, and pat dry with some kitchen paper.
Individually coat each sardine in the flour mix by placing on the plate, patting, then turning over.
Put a few slices of lemon into each sardine's belly and then pop in an oiled oven tray, and cook in the oven at 180 degrees C for 25 mins. If using fillets, put the lemons under each fillet on the oven tray (fillets skin side up so they get all crispy).
To check if the fish is done simply take a fork to one of the fish, and peek to see if the flesh has lost it's transluscent colour. Easy.
