6 Wholemeal Turkish flatbreads (or Tortillas)
6-8tbsp pesto (the best quality you can get)or a batch of simple tomato sauce
250g mixed tomatoes, either sliced or halved
2 packs mozzarella
2 tbsp toasted pine nuts
handful shredded basil or rocket leaves (optional)
Other variations could include:
Spread onion marmalade onto the flatbread and top with goats cheese and some walnuts.
Spread pesto on the flatbread, arrange thinly sliced pear, gorgonzola and pine nuts. Top with rocket when cooked.
Add oregano, garlic and olive oil to some chargilled aubergine and sliced tomatoes, mix well and arrange on the flatbread with mozzarella and pine nuts.

Spread the flatbreads with the pesto or tomato sauce, arrange the tomatoes and mozzarella on top and grind over some pepper. Cook at 200C for 15mins or until the cheese is bubbling and golden. Top with the pine nuts and basil.
