Serves 4 as a starter, or 2 for an indulgent treat

1 camembert, in its wooden box, with wrappings removed
6-8 capers (optional)
3 sprigs thyme (optional)
Bread and or crudites to serve

**Please note it's essential to buy cheese in a box with staples - the glued ones will melt in the oven. Other cheeses in boxes would also work well here, for example brie.

This does not keep. Eat it all in one sitting.

Easy fondue (aka baked cheese in a box)

When the cheese urge strikes there's little to do other than surrender. I find smothering the craving with this melted cheese creation the best way to satify the need.

If you're having people to dinner, bake a bigger cheese and surround its baked form with chichory leaves, carrots, crusty bread and even cooked new pototoes and invite your guests to dive in. Literally.

Recipe

Pre-heat the oven to 180°C.

Slash a cross in the top of the cheese (don't cut through any of the skin on the sides or bottom) and gently peel. Prod the capers and thyme into the cuts.

Pop the cheese onto a baking tray and slide into the oven. Bake for 10-15 minutes - when it's done, the flesh will give when prodded with your fingers, and the inside will be molten goo.

Peel the four top sections back, and dive in, bread and crudites at the ready.
