500g Jerusalem Artichokes, peeled
1 lemon - zested and juiced
5 tbsp creme fraiche
4 tbsp breadcrumbs (see basics recipe)
2 tbsp chopped parsley - optional

Nobbly and vaguely looking like some rare breed of potato, Jerusalem artichokes have a wonderful mild nutty flavour and make a great alternative to potatoes.Here, the creamy tang of creme fraiche really suits the mellow but present flavour of the jerusalem artichokes.
