Nobbly and vaguely looking like some rare breed of potato, Jerusalem artichokes have a wonderful mild nutty flavour and make a great alternative to potatoes.

Here, the creamy tang of creme fraiche really suits the mellow but present flavour of the jerusalem artichokes.
