Ingredients

2 ripe avocados
1 lime, juiced
1 green chilli - finely chopped
2 tbsp olive oil
1 small onion (or shallot) finely chopped (optional)
5 cherry tomatoes, chopped (optional)
Salt and pepper - to taste

The lime will help stop the avocado from discolouring, but wont stop it completely - therefore don't make this too far in advance, and it's best eaten on the day you make it.

Perfect served with fajitas, or Spicy Potato Wedges here

Recipe

If you have a food processor - just shove it all in, blitz until a chunky paste.

If you want to do it manually:
Put the avocado in a bowl and mash with a fork (or potato masher), adding the lime juice to help make it all a bit more liquid
Mash until you have a chunky paste, or your desired consistency
Stir through the remaining ingredients
