For Scrambled Eggs you will need...

Per person:
1-2 eggs
2 slices of good quality bread
salt and pepper
a dash of milk

Here's how...

Make sure you use the best quality eggs you can. Don't even bother with Battery eggs.

Break the eggs into a bowl, add the milk and seasoning and whisk well. Meanwhile toast your bread and butter well. Heat a knob of butter in a non-stick frying pan, when the butter is bubbling, add the eggs. Stir occasionally so that you end up with nice big pieces of egg. Remember, the eggs continue to cook when taken off the heat, so remove before they look completely cooked.

For a decadent twist, add some double cream to the eggs as they are cooking in the pan. sprinkle with chopped chives and some slivers of smoked salmon.

Add a handful of grated cheese to the pan. Serve with tobasco sauce and maybe some baked beans.
