What better way than treat your mum on Mothers’ day than by baking her something delicious? Here at OxNosh, we’ll have our pinnies on (no surprises there) as we love making edible gifts - try baking this delicious Carrot, Orange and Pistachio Cake, or parcelling her up some of these decadent chocolate brownies - they’d look lovely dusted with cocoa and wrapped up in some brightly coloured tissue paper, try hot pink or turquoise.
If sweet cakes and afternoon tea doesn’t get you all excited about cooking for your mum, then why not make her a relaxed Sunday lunch? And a fresh, spring inspired one at that.
Start off with this hot pink beetroot soup, the fresh tingly flavours of which will leave you hungry for a spring-like menu of roast chicken, served with courgette caponata and a light new potato and radish salad, using this recipe but omitting the mackerel.
After a relaxing afternoon of eating and enjoying, tuck into a slice of fruit tart, made with spoonfuls of passionfruit as a luxurious topping, complimented by that gorgeous mascapone base.
It’s a great menu as so much of it can be made in advance, leaving you time to enjoy your mum’s company.
